Which metal for what
Most questions we get at the counter are really one question. Here is the answer, the way our grandfather gave it.
Kadai, handi and tope. Heats evenly and holds it; lined with pure tin (kalai) so dal, kadhi and tamarind are safe.
Never: Sour food in an unlined pot
Shop brassBottles, jugs and matkas left bare inside, so the water that sits overnight actually touches the metal.
Never: Juice, milk or nimbu pani
Shop copperThalis, katoris and tumblers in 78:22 bell metal. Does not react with sour or salty food, so it needs no lining at all.
Never: The microwave or dishwasher

Kalai, explained
Brass and copper react with sour food. For centuries the answer has been kalai: a thin coat of pure tin, melted into the hot vessel with a little nausadar and wiped on with cotton until the inside shines like silver. Ours is 99.9% pure tin with no lead or zinc filler. With daily cooking a lining lasts eighteen months to two years; when the yellow starts to show through, send it back and we re-tin it.

Capacity guide
Capacities are measured to the brim. For dal and rice, cook in a pot about half as big again as the finished dish, so it can come to a rolling boil without spilling.

New at the workshop
Wedding & housewarming
In most Gujarati homes the first kansa thali arrives with a wedding and the first copper matka with a griha pravesh. We engrave names and dates by hand, pack each set in a cotton bag and kraft box with a care card, and split bulk orders across as many addresses as the family list needs - with a GST invoice for every one.
Since 1968
Ramniklal Kansara opened a one-room workshop off Manek Chowk in 1968, beating kadai and tope for the restaurants of the old city and re-tinning whatever the neighbourhood brought in on a Sunday. The anvils and the coal forge are still in the back room.
His granddaughter Mitali runs the workshop today with nine craftsmen. The rules have barely changed: alloy from a foundry we can visit, every batch tested for lead, tin that is tin, and no vessel sold that we would not re-line ourselves.

My mother’s kadai came to Kansa & Co. for its first kalai in 1979. I sent it again this year with my own, and both came back gleaming inside with the weight written on a slip.

Ordered forty kansa katori sets for my daughter’s wedding. Every name was engraved correctly, they split the delivery across six cities, and the GST invoice was in my inbox the same day.

Finally a copper bottle that is actually unlacquered inside. The water tastes of nothing at all, which is the point.
