Mamra almonds from Kashmir, roasted dry and panned in three layers of our 70% Idukki couverture over about five hours, then finished with a dusting of unsweetened cocoa powder.
Slow panning is what keeps the almond audibly crisp under the chocolate. Keeps eight weeks in the resealable pouch and travels better than anything else we make in June.

I have bought most Indian craft bars and this is the first 70% where the red banana note on the wrapper is genuinely there. The snap was perfect even though it travelled in April - the ice packs were still cold when it arrived.
