Six-day ferment, 48-hour conche
The bar we are judged on. A blend of four Idukki farms, fermented six days in rosewood boxes and roasted at 118°C for 22 minutes, then conched 48 hours until the edge comes off the acidity but the fruit stays.
Snap is clean at 22°C and the melt is slow rather than waxy - there is no added fat beyond a little cocoa butter to bring the viscosity down for moulding. Best eaten within four months of the tempering date stamped on the back.

I have bought most Indian craft bars and this is the first 70% where the red banana note on the wrapper is genuinely there. The snap was perfect even though it travelled in April - the ice packs were still cold when it arrived.
