A 65% dark shell filled with a praline we grind ourselves: Turkish hazelnuts roasted to a deep colour, caramelised with cane sugar at 165°C, then stone-ground for six hours until it flows.
Forty per cent hazelnut by weight, which is why it tastes of nut first and sugar second. The shell is tempered thin so it gives way rather than cracks.
FSSAI licensed kitchen, 100% vegetarian, no palm oil. Every order leaves Ahmedabad in insulated packing with gel ice packs from March to October - if the destination is above 38°C we hold the parcel a day and ship on the next cool-chain slot rather than send you soft chocolate. I have bought most Indian craft bars and this is the first 70% where the red banana note on the wrapper is genuinely there. The snap was perfect even though it travelled in April - the ice packs were still cold when it arrived.
