A dark-milk bar at 55% cacao, which is roughly twice the cacao content of a commercial milk chocolate and half the sugar. The milk is a whole-milk powder from a Mehsana dairy, added late in the conche so it never catches.

Conched 60 hours to knock the graininess out of the powder. The result is caramel-forward without tasting of caramel, and it is the bar we hand to people who say they do not like dark chocolate.

    The 70% actually tastes of fruit

    I have bought most Indian craft bars and this is the first 70% where the red banana note on the wrapper is genuinely there. The snap was perfect even though it travelled in April - the ice packs were still cold when it arrived.

    Missed the 82% and I am still annoyed
