Coarse chana besan is rubbed with hot ghee and a little milk, rested until it turns sandy, then roasted in one kadai for close to ninety minutes until the kitchen smells of it from the street. That roast is the entire dish - rush it and you get halwa, not mohanthal.
Set with a saffron and cardamom sugar syrup and finished with sliced almond and pistachio. It stays grainy rather than fudgy, exactly as it should, and travels better than any other sweet we make.

Real mawa, no doubt about it, and the kesar is not just colour. Only four days shelf life though, so time the order for the day of your puja rather than ordering ahead like I did.
