Whole W240 cashews are ground the same morning and cooked with sugar to a single-thread consistency, then rolled out by hand on a marble slab and cut into diamonds. No milk powder, no maida, no thickener - cashew and sugar are the whole recipe.
We finish each tray with edible silver leaf and nothing else. The katli should be thin enough to see the tray through and soft enough to break with a thumb, which is why we make it to order rather than stack it in a display case.

Real mawa, no doubt about it, and the kesar is not just colour. Only four days shelf life though, so time the order for the day of your puja rather than ordering ahead like I did.
