The eggless kitchen
Eggless is the default, not the exception
Two in three cakes we send out are eggless, so we built the kitchen around them. Our eggless sponges are made on their own line with curd and condensed milk, and they rise as high as anything with egg in it. Choose "With egg" and the sponge is baked in a separate oven, boxed separately and marked with a brown dot on the lid. No gelatin anywhere - our mousse and glazes set with agar.

From one oven in Navrangpura to every corner of the city
Mithas began in 2014 as Snehal Joshi’s home kitchen in Navrangpura, baking eggless birthday cakes for neighbours who could not find one that tasted as good as the egg version. Word travelled faster than her two-wheeler could.
Today the studio runs from a single licensed kitchen in Prahladnagar with fourteen riders, four delivery windows and the same rule it started with: every cake is baked on the day it is delivered, and every cake can be eggless.

Ordered from Pune at 8 PM for my wife’s birthday. The rider rang at 11:52, the message was piped exactly as I typed it, and they sent me a photo of the handover. The truffle was rich without being heavy.

Eggless that nobody could tell
My in-laws do not eat egg, so we ordered the eggless red velvet heart for their anniversary. Soft, moist and the cream cheese frosting was not too sweet. Nobody believed it was eggless.

They called to confirm the crop before printing, which I appreciated. The print was sharp and the pineapple cake was fresh. Just remember it needs four hours; I had to move from afternoon to evening.
