Multigrain Sourdough
36-hour cold ferment, no yeast
Leavened only with our own starter, which has been fed twice a day since 2019. The dough is mixed with stone-ground atta, ragi, jowar and cracked flaxseed, then cold-fermented for thirty-six hours before it is shaped.
That long ferment is what gives it the open crumb, the mild sourness and the keeping quality - there is no commercial yeast, no bread improver and no preservative anywhere in it. We bake one batch a morning and it usually goes by noon.

Genuinely the best multigrain loaf in the city, and the thirty-six hour ferment shows in the crumb. My only complaint is that it sells out by noon almost every day, so plan ahead or you will be buying the banana bread instead.
