The nankhatai my mother-in-law approves of
Two years of monthly orders and it has never once been dry or over-baked. You can taste that it is real ghee and freshly pounded cardamom, not essence. The delivery boy always arrives before lunch.
Made the way it is made at home: pure cow ghee beaten with powdered sugar until pale, then folded through gram flour, semolina and freshly pounded green cardamom. The dough is never kneaded, only pressed, which is what keeps the crumb short.
Each one is topped with a split pistachio and baked low and slow so it cracks across the top rather than browning. Best with strong cutting chai, which is how most of ours are eaten.
