A proper twice-baked biscotti, loaded with whole Mamra almonds from Kutch and scented with orange zest grated in by hand. The log is baked, cooled, sliced on the diagonal and returned to the oven until it dries right through.
Hard enough to hold up to a cup of filter coffee without going to pieces, and sturdy enough to travel well - these are the ones we send out of state.
