Butter browned until it smells of toasted nuts, then cooled and beaten with muscovado sugar for a dough that bakes chewy in the middle and crisp at the rim. It rests a full twenty-four hours before it is scooped.
We use 54% couverture chocolate broken into shards rather than uniform chips, so some bites are pure chocolate and some are not. A few flakes of sea salt go on just before they enter the oven.
