Built on single-origin cocoa from a small estate in Idukki and 64% couverture melted into hot butter, which is what gives the brownie its paper-thin crackled top and a centre that stays fudgy for days.
We cut them thick and under-bake them deliberately by a few minutes. Warm them for ten seconds and the middle goes molten again; eat them cold and they behave almost like truffle.
