We start this one in October. Raisins, black currants, candied orange peel and dried figs are soaked for eight weeks in orange juice and warm spice, then folded into a dark batter built on jaggery and browned butter.
It bakes low for almost two hours and comes out dense, dark and barely sweet, with the fruit doing most of the work. It keeps beautifully, and it improves for the first week after you cut it.

Genuinely the best multigrain loaf in the city, and the thirty-six hour ferment shows in the crumb. My only complaint is that it sells out by noon almost every day, so plan ahead or you will be buying the banana bread instead.
