Two years of monthly orders and it has never once been dry or over-baked. You can taste that it is real ghee and freshly pounded cardamom, not essence. The delivery boy always arrives before lunch.
A milk loaf scented with green cardamom is baked, rested overnight, then sliced thick and returned to a low oven until it dries golden right through. That is all a rusk is, done properly and without palm oil.
It holds its shape in hot chai for a good few seconds longer than the packaged kind, and it is barely sweet, so the tea still tastes of tea.
