Soft besan dough pushed through a hand press into the kadai in long ribbons, fried just past pale gold so it stays light rather than hard. Ajwain in the dough, black pepper on the vanela, and a proper amount of chilli on the tikha.

Real mawa, no doubt about it, and the kesar is not just colour. Only four days shelf life though, so time the order for the day of your puja rather than ordering ahead like I did.
