Raw Rajapuri mangoes from Talala, cut with the stone in the first week of May, salted overnight and then sun-cured on the terrace for four days until the water has gone and the piece has firmed up.
Filled with our own cold-pressed groundnut oil, mustard dal, fenugreek and our chilli powder. No vinegar, no acetic acid, no preservative - the salt and the oil do that work, as they have since 1968. This is a single lot; when it is gone, it is next May.
